Your chances of contracting herpes are pretty high, even with condom use. If your girlfriend is currently taking daily suppressive therapy (e.g. Valtrex), then it minimizes your chances of getting genital herpes (or Herpes Simplex 2), but the risk is always there.
Your girlfriend is most contagious when she feels the tingle of an outbreak and at the very beginning of an outbreak, so don't engage in sex at these times.
I still recommend using a condom and being safe about it. Personally, I think you're a great guy to be so open about this and for trying to educate yourself about herpes rather than running for the hills.
Herpes is not dangerous; it's just a nuisance for men (it's dangerous for pregnant women giving birth during an outbreak - actually, it's dangerous for the baby being born).

My girlfriend and I have the best sex on earth. By the time we're done, the bed's in the middle of the room and we have a hard time finding our clothes. After all is said and done, though, we end up with the matter of my sperm all over her body. We've tried wiping it with tissues, but it just sticks to her body and gets all nasty.
We want to lie there together without worrying about getting sperm all over the sheets. Is there something you can recommend for the clean up?

Ah Enzo, you lucky dog, you. Yeah, tissues are not the way to go, they just make everything worse. It's best to invest in baby wipes. Use them to clean up the spills, so to speak, without having to worry about messing up the sheets.
